What is a raw cashew cake?
Imagine a creamy luxurious cheesecake - but without the dairy, nor eggs, nor gluten, nor white sugar! Raw cakes are made of soaked cashews that get blended with other yummy ingredients, then poured onto a crunchy crust made of nuts and dried fruit. This sets in the fridge until firm. They are vegan, raw, and entirely plant-based!
Are the ingredients raw?
Yes, *99% of them. All of the nuts should be raw, as should the cacao. We recommend maple syrup as the sweetener, which is heated during processing to extract excess water.

Do the cakes contain preservatives?
No. The ingredients are 100% natural and perishable.
How long can I store a cake in my freezer?
Cakes can be stored frozen & wrapped tightly in freezer-safe plastic wrap for 3-6 months.
How long can I store a cake in my fridge?
Cakes can be stored in the fridge up to 4 days.
How big are the cakes?
Each recipe as written in the book will make EITHER two cakes that measure 6" across and about 2.5" tall, OR one cake that measures 8" across and 2" tall.
How many servings are there in a cake?
6" cakes have about 6 small slices. 8" cakes have 12-14 slices. A slice may seem small but this is not a normal cake. The ingredients are rich, filling and nutritionally dense!

Cashews

Almonds

Dates
Loaded with energy, they’re high in fiber, and contain more potassium than bananas. They are also high in B vitamins, magnesium, and iron.
Coconut milk
High in fiber, manganese, potassium and copper. It helps regulate digestion, assists in weight loss, and is a powerful germ fighter.
Coconut Oil
Made from cold-pressed mature coconut meat, it is a raw saturated fat which the body can metabolize efficiently and convert to energy quickly. It contains no cholesterol and helps the body break up accumulated fats in the system and metabolize them. It also contains lauric acid, which is anti-viral and anti-microbial.
